{"id":556,"date":"2023-06-07T00:00:20","date_gmt":"2023-06-07T03:00:20","guid":{"rendered":"https:\/\/nogoyatimes.com\/?p=556"},"modified":"2023-06-06T23:40:46","modified_gmt":"2023-06-07T02:40:46","slug":"estiman-que-el-consumo-total-de-carnes-sera-de-1152-kilogramos-por-persona-al-cabo-de-2023","status":"publish","type":"post","link":"https:\/\/nogoyatimes.com\/?p=556","title":{"rendered":"Estiman que el consumo total de carnes ser\u00e1 de 115,2 kilogramos por persona al cabo de 2023"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">El consumo de carne bovina, aviar y porcina podr\u00eda crecer 4,2% interanual en Argentina durante el corriente a\u00f1o y alcanzar un promedio de 115,2 kilogramos por personas, en valores similares a los registrados en 2017cuando la ingesta de prote\u00edna animal fue de 115,5 kilogramos, seg\u00fan un informe de la Bolsa de Comercio de Rosario (BCR). A pesar de la recuperaci\u00f3n, la entidad remarc\u00f3 que &#8220;el poder de compra de las remuneraciones en t\u00e9rminos de carne todav\u00eda se encuentra casi 10 kilogramos por debajo del promedio de los \u00faltimos 10 a\u00f1os&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De esta manera, cada habitante consumir\u00eda en 2023 un total de entre 4 y 3,4 kilogramos por encima de los promedios registrados en los \u00faltimos a\u00f1os 5 y 10 a\u00f1os, respectivamente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Seg\u00fan la entidad burs\u00e1til rosarina, del total a consumirse este a\u00f1o, la mayor\u00eda provendr\u00eda de la carne vacuna, con una participaci\u00f3n del 46% sobre el total, equivalente a 53,1 kilogramos por persona. Mientras que el 39% del total (45,1 kg) corresponder\u00edan a carne aviar y el restante 15% (16,9 kg) a carne porcina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De concretarse este guarismo, el consumo de carne vacuna crecer\u00eda por segundo a\u00f1o consecutivo, con una expansi\u00f3n del 2,3% respecto a 2022, posicion\u00e1ndose en niveles similares a los de 2019. Por su parte, la carne aviar tendr\u00eda un retroceso del 0,88% (0,4 kilogramos) en comparaci\u00f3n con su participaci\u00f3n durante 2022; mientras que la de cerdo crecer\u00eda 0,2% (0,2 kilogramos) hasta los 16,9 kilogramos por habitante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La Bolsa rosarina se\u00f1al\u00f3 que una de las razones que podr\u00eda explicar la expansi\u00f3n en el consumo responde a una mejora en la capacidad adquisitiva de los salarios en t\u00e9rminos de carne, calculado en base a los promedios anuales de las remuneraciones brutas desestacionalizadas, informadas por el Sistema Integrado Previsional Argentino, divididas por la media anual del precio del kg de asado para el mismo per\u00edodo, relevado por el Instituto de Promoci\u00f3n de la Carne Vacuna Argentina.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/www.campoenaccion.com\/galeria\/fotos\/2023\/06\/06\/o_1686088941.png\" alt=\"\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">&#8220;De este modo, la remuneraci\u00f3n bruta promedio del sector asalariado alcanzar\u00eda para comprar 163,5 kg de asado en el 2023. Este dato indica una recuperaci\u00f3n respecto del piso relativo alcanzado en 2021, cuando el poder de compra de los sueldos era de 134 kg, y puede ser uno de los factores explicativos del incremento en el consumo c\u00e1rnico que se viene experimentando este a\u00f1o&#8221;, se indic\u00f3 en el trabajo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Otra variable que destac\u00f3 el trabajo para explicar la din\u00e1mica de los diferentes consumos c\u00e1rnicos es la relaci\u00f3n que existe entre el precio de la carne vacuna y el de sus opciones sustitutas (aviar y porcina) combinadas. As\u00ed, se &#8220;observa que desde 2021 la carne vacuna se ha abaratado relativamente en t\u00e9rminos del mix de pollo y cerdo: mientras que en 2021 se pod\u00edan comprar 2,1 kg de mix con lo que sal\u00eda 1 kg de asado, en 2023 esta cantidad baj\u00f3 a 1,9. Sin embargo, puede afirmarse que la carne vacuna a\u00fan est\u00e1 cara si se la compara con el promedio de los \u00faltimos 10 a\u00f1os, que es de 1,7 kg&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A modo de resumen, puede concluirse a partir de los datos analizados que &#8220;el poder adquisitivo en t\u00e9rminos de carne vacuna ha mejorado en los \u00faltimos dos a\u00f1os, tanto por su relaci\u00f3n con los salarios como con los precios de otras carnes, por lo cual ha aumentado su participaci\u00f3n relativa en el consumo&#8221;. Sin embargo, &#8220;si se aleja la lupa y se observa un per\u00edodo m\u00e1s largo, como puede ser el promedio de los \u00faltimos 10 a\u00f1os, se observa que el consumo de carne de vaca ha perdido terreno contra el de sus productos alternativos como resultado de un menor poder de compra de los salarios y de un abaratamiento relativo del pollo y el cerdo&#8221;, advirti\u00f3 la entidad burs\u00e1til.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pero m\u00e1s all\u00e1 de esta situaci\u00f3n, el estudio de la BCR subray\u00f3 que &#8220;Argentina todav\u00eda sigue siendo el principal consumidor de carne bovina por habitante a nivel mundial&#8221;. En el ranking global, en 2023 para la Argentina se estima un consumo de 53,1 kg por habitante, por encima de Uruguay y Estados Unidos, donde cada habitante en promedio se ubicar\u00eda en 43 y 37 kg, respectivamente.
